I'm Marcus, a home cook living in Charleston, South Carolina, with a serious weakness for bold flavors and a refrigerator that is almost always too full. I'm not a chef and I have never pretended to be.

What I am is someone who genuinely loves to cook, loves to feed people, and has spent years figuring out how to make everyday meals taste like they took far more effort than they actually did.

My approach to food is straightforward: use good ingredients, don't overcomplicate things, and always taste as you go. Also, do the dishes eventually.

Outside the kitchen, I'm drawn to the same things that tend to end up on my table: farmers markets on Saturday mornings and the kind of conversations that happen over a long dinner.

My Expertise

Everything I know about cooking I learned the slow way, through trial, error, and a fair number of meals that didn't quite land the way I intended. Over the years I developed a habit of testing recipes obsessively, not just once but multiple times, adjusting ratios, changing techniques, and asking myself whether the steps are genuinely necessary or just there to make things look more complicated.

Every recipe on JoliTable has been through that process. I care about reliability. If a recipe says thirty minutes, it means thirty minutes. If it says simple, it means a real person on a busy evening can pull it off without a culinary degree.

My Journey

JoliTable started because I kept sending the same recipes to the same people and eventually decided there had to be a better system. What began as a small collection of go-to dinners grew gradually into something much bigger, mostly because the feedback kept coming in and the questions kept pushing me to explain more.

My cooking evolved too. I went from following instructions carefully to understanding the logic behind them, and that shift changed everything about how I write and teach. Today what keeps me going is the reader who tries a recipe and actually writes back. Those messages are the whole point.

"I'm proud that nothing goes up on this site until it has been made in my own kitchen and eaten at my own table. Every recipe you find here is honest, tested, and written for the kind of cook who just wants things to work."
